Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 1 cup shredded mozzarella cheese (or more, if you like it cheesy)
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder (optional)
- 1 teaspoon dried oregano (optional)
- Fresh basil (for garnish, optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper.
- Optionally, you can pound them to an even thickness for more consistent cooking.
- Breading Mixture:
- In a shallow bowl, combine crushed pork rinds, garlic powder, and dried oregano.
- Egg Wash:
- In another bowl, whisk together the egg and heavy cream (if using).
- Coat the Chicken:
- Dip each chicken breast into the egg mixture, then coat with the pork rind mixture.
- Cook the Chicken:
- Heat a skillet over medium-high heat with a little butter or oil. Once hot, add the chicken breasts and cook for about 3-4 minutes per side until golden brown.
- Add Cheese:
- Transfer the browned chicken to a baking dish. Top each breast with mozzarella and Parmesan cheese.
