Keto Chicken Parm

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper (to taste)
  • 1 cup shredded mozzarella cheese (or more, if you like it cheesy)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried oregano (optional)
  • Fresh basil (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Optionally, you can pound them to an even thickness for more consistent cooking.
  3. Breading Mixture:
    • In a shallow bowl, combine crushed pork rinds, garlic powder, and dried oregano.
  4. Egg Wash:
    • In another bowl, whisk together the egg and heavy cream (if using).
  5. Coat the Chicken:
    • Dip each chicken breast into the egg mixture, then coat with the pork rind mixture.
  6. Cook the Chicken:
    • Heat a skillet over medium-high heat with a little butter or oil. Once hot, add the chicken breasts and cook for about 3-4 minutes per side until golden brown.
  7. Add Cheese:
    • Transfer the browned chicken to a baking dish. Top each breast with mozzarella and Parmesan cheese.
  8. Bake:
    • Place the dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and golden and the chicken is cooked through (internal temp of 165°F or 74°C).
  9. Serve:
